With a velvety consistency and a delicate flavour profile, this custard is the perfect dessert to savor on any occasion!

700g Sheep Milk

  • 700 g Jones Family Farm Sheep Milk
  • 300 g Cream
  • 100 g Sugar
  • 200 g Egg Yolk


  • Pour the cream and milk into a pot, place on medium heat and bring to a simmer.
    700 g Jones Family Farm Sheep Milk, 300 g Cream
  • Cream the egg yolks and sugar in a separate bowl until nice and pale, then slowly add to the heated liquid and whisk well.
    100 g Sugar, 200 g Egg Yolk
  • Pour this mixture into a clean pot and place back on the heat. Continuously stir the mixture with a spatula while cooking on medium heat until it heats to around 85⁰C. You will be able to tell when it reaches this temperature as it will thicken and coat the back of the spoon.
  • Remove from the heat and stir for a further 30 seconds before pouring on an ice bain-marie to cool.


**To make an ice bain-marie, place ice in a larger bowl with a little water, place another bowl on top and use this to cool the hot liquid.
