Ingredients
- 700 g Jones Family Farm Sheep Milk
- 300 g Cream
- 100 g Sugar
- 200 g Egg Yolk
Instructions
- Pour the cream and milk into a pot, place on medium heat and bring to a simmer.700 g Jones Family Farm Sheep Milk, 300 g Cream
- Cream the egg yolks and sugar in a separate bowl until nice and pale, then slowly add to the heated liquid and whisk well.100 g Sugar, 200 g Egg Yolk
- Pour this mixture into a clean pot and place back on the heat. Continuously stir the mixture with a spatula while cooking on medium heat until it heats to around 85⁰C. You will be able to tell when it reaches this temperature as it will thicken and coat the back of the spoon.
- Remove from the heat and stir for a further 30 seconds before pouring on an ice bain-marie to cool.
Notes
**To make an ice bain-marie, place ice in a larger bowl with a little water, place another bowl on top and use this to cool the hot liquid.
