Cheesy Tuna Casserole

Ingredients
- 2 cups dry macaroni elbows
- 3 T coconut oil or butter
- 3 T flour
- 1.5 cups sheep milk
- 120 g Creamy Havarti Sheep Milk Cheese
- 1 onion or a small handful of shallots finely chopped
- 1/2 cup mushrooms finely chopped
- 1/2 cup celery finely chopped
- 1 cup frozen peas
- fresh chives, parsley, or chervil finely chopped for garnish
- 185 g tuna in spring water plain or flavoured
- fresh ground pepper
- 1/3 cup breadcrumbs or crushed corn flakes
Instructions
Pasta
- Cook pasta until al-dente. Drain and set aside, spraying some olive oil on to keep from sticking.2 cups dry macaroni elbows
Cheese Sauce
- Melt butter in a saucepan on low heat.3 T coconut oil or butter
- Mix flour with 1/2 cup cold sheep milk until there are no lumps (top tip: mix in a jar by shaking).3 T flour, 1.5 cups sheep milk
- Pour into saucepan with the butter, add the rest of the milk, turn up the heat to medium, and stir continuously until sauce thickens.
- Once thickened, remove sauce from heat and stir in grated cheese. Season with pepper.120 g Creamy Havarti Sheep Milk Cheese, fresh ground pepper
Casserole
- Saute shallots or onion with the chopped mushrooms, celery, and peas in a little olive oil.1 onion or a small handful of shallots, 1/2 cup mushrooms, 1/2 cup celery, 1 cup frozen peas
- Mix everything (except bread crumbs/cornflakes) together and put in a deep casserole dish.185 g tuna in spring water plain or flavoured
- Sprinkle crumbs on top and put in oven under grill for 5-10 minutes or until golden brown.1/3 cup breadcrumbs or crushed corn flakes
- Garnish before serving.fresh chives, parsley, or chervil
